Chantico Agave & Sweet Potato Muffins

Celebrate Mother’s Day with a warm, homemade recipe that brings comfort and sweetness to the table, perfect for showing love and appreciation through every bite.
Ingredients
· 1 ½ cups (190g) All-purpose flour
· 1 tsp Baking soda
· ½ tsp Salt
· 1 tsp Ground ginger
· ½ tsp Ground cloves
· 1 cup Mashed cooked sweet potato
· ½ cup (120ml) Chantico Raw Agave Syrup
· ½ cup (120ml) Melted coconut oil
· 2 Large eggs
· 1 tsp Vanilla extract
Directions
1. Preheat oven to 350°F (175°C) and line a muffin tin.
2. Whisk flour, baking soda, salt, and spices in a medium bowl.
3. In a large bowl, whisk sweet potato, agave, oil, eggs, and vanilla.
4. Fold dry ingredients into wet until just combined.
5. Divide batter into muffin cups and bake for 20-22 minutes.
6. Cool in tin for 5 minutes before moving to a rack.
