4 cups all-purpose flour
2 tsp baking powder
1 tsp salt
4 tbsp shortening
1 1/2 cups warm water
2 quarts oil for frying

Whisk together the flour, baking powder, and salt in a large bowl. Cut in the shortening until the pieces are pea-sized. Pour in the warm water and mix to form a dough.
Cover the dough with a cloth and let rest 20 minutes.
Heat the oil in a deep pan to 375ºF.
Roll the dough out on a lightly floured surface until it is 1/4 inch thick. Cut the dough into 3 inch squares. Fry until golden brown on both sides, then place on paper towels to drain off excess oil.
Serve hot and fresh with agave.
