Gluten-Free Banana Chocolate Chip Muffins


  • 1 banana

  • 1 egg

  • 5 oz unsweetened peanut butter

  • 1tbsp WILD agave

  • 1 tbsp vanilla extract

  • ¼ tbsp baking soda

  • ¼ cup chocolate chips


  1. Preheat oven to 400º F/220º C.

  2. Prepare lightly oil muffin pan or line with muffin tins.

  3. Add banana, egg, peanut butter, agave, vanilla extract, and baking soda to a blender and puree (alternately, mash well and mix by hand).

  4. Mix in chocolate chips.

  5. Divide the batter evenly and pour it into the muffin pan holes. Bake for 10 minutes.
